Ensconced amidst the ancient geology and steep shamrock-green slopes that form the Adelaide Hills, we find the region’s largest certified-sustainable winery: Sidewood Estate. Founded in the early 2000s by Owen and Cassandra Inglis, Sidewood focuses on crafting restrained, elegant wines that speak to the prowess and potential of their cool-climate home, situated between its warmer northerly cousin the Barossa Valley and its southerly neighbours McLaren Vale and Langhorne Creek.
