Biodynamics got a strong and early start at Champagne Fleury, the century-old family estate burrowed into the idyllic terrain of France’s Côte des Bar. Fleury, which has been at its craft since 1901, turned fully biodynamic in 1989 (ahead of everyone else in the region) at the behest of esteemed conservationist Monsieur Jean-Pierre Fleury. Since then, the renowned estate has established itself as the premier producer of Pinot Noir, brought to bubbly life in this elegant, assured Blanc de Noirs and benchmark grower Champagne crafted with fruit grown on 25-year-old vines and redolent of white peach and white flowers.

In the French region of Aube, surrounded by dense forests, babbling brooks, and bucolic farmland, the Côte des Bar sits to the east of Champagne. A rebel of sorts against the prestige and classicity of its neighbour, the Côte des Bar has quickly gained fame for the quality of its Pinot Noir, an essential member of the Champagne grape trio also including Chardonnay and Pinot Meunier.
